With actual AirPods and AirPods Pro. I can definitely recommend it, everything including Handoff etc. works flawlessly. The only thing I added is an antenna extension for the BT module to get the antenna closer to the front of my desk.

Oh, I missed that detail, sorry. Yes, that does seem strange. For what it's worth, I have this BT module as opposed to the one OP mentioned and I'm only observing the expected drop to 16kHz, so no difference between my Hackintosh and my MacBook Pro.

This isn't a Hackintosh problem, it's a bluetooth audio on (any) Mac problem. Basically any bluetooth headset will switch to the inferior SCO audio codec when it's also used as a microphone. Here's a link with more info: https://appletoolbox.com/bluetooth-headphones-sound-issues-macbook-fix/

I'm afraid I can't be of much help, other than saying that I successfully ran an install of High Sierra on an Asus ROG Strix Z390-F Gaming, so the motherboard shouldn't be the problem.
