Intel i225-V ethernet is now natively supported in Sonoma, so you shouldn't be using the AppleIGC.kext or the e1000=0 boot argument.
Remove the kext and the e1000=0 boot argument, then enable VT-D in your BIOS and disable Kernel > Quirks > DisableIoMapper in config.plist as @Edhawk suggested...
Thanks for the recommendation, I'd figured that but tried to use Iboysoft NTFS which I would definitely not recommend - it left my NTFS drive unmountable and a bit of a mess I had to get busy in terminal to fix it.

Thanks but as I said in my post above I did try darkwake=0 but I'd only tried it from the Clover boot screen, so I tried adding it in to my config.plist instead. Still no joy - my machine resets when it wakes up.

Try this first, if it doesn't do the trick you can also try the KF "PCIRootUID=0 DSDT=/dev/null/ -x". I need to use this to get Unibeast to boot.
Well I think you may have got to the cause of the problem! I had to choose P0:DISKNAME not UEFI:DISKNAME as it won't boot if I choose UEFI, I get a message saying 'insert book disk and press enter' or similar.
