I normally use the front jack for sound, but HDMI sound does work for me. I just ran a test to be sure.
Do you have FakePCIID and FakePCIID_Intel_HDMI_Audio in /L/E?

Yes, sleep/wake works fine, with the small exception I mentioned.
I run my NUC 24/7 too. Never had a failure to wake up. It will sleep either manually via the menu, or the automatically via the setting in System Prefs.
I’m running 10.12.6. on a Nuc8i7beh, using Clover as the bootloader. I’m spoofing the cpu as Kaby lake (0x0906E9) and the gpu as Iris plus 650 (0x5927). It’s set as an iMac18,3.
Works fine. The only problem I’ve had is that about 20% of the time when I put it to sleep, it wakes up...
