So, here's the setup, Windows 7 is on a pair of 500GB drives in a RAID1 run by the Intel controller. Mac OSX is on a single 1TB drive. Both are happily bootable if I just go into the BIOS and switch which drive boots first. ...But that's a terrible way to select which OS to boot. I've worked...

Did you try manually copying boot1h in Single User Mode? I tried it in the terminal in normal mode, but it still would never TRUELY copy. Once I did it in single user mode, it works and it's worked every time since.
