Installed the ELAN kext for the driver found here, and now the trackpad is working but its effectively 'throwing' the cursor in the direction I move it, until it hits the corner of the screen.

Judging by that article it doesn't look like the trackpad issue will be able to be fixed. That's kinda a deal-breaker, as I never use a mouse with my laptop and carrying one around with me isn't an option.

Nevermind I understand what you mean, this is all starting to click in my head finally. That's done, now checking if the bootloader is working without the USB in. EDIT: Still not working. If I select to boot from HDD, it goes straight to PXE ROM and then exits, and restarts the laptop.

My drivers64UEFI folder contains an extra file titled "VBoxHfs-64.efi" that I can't see in the photo in the guide... Should I delete it?

Okay, I was referring to the USB installer and I went with the MBR formatting. Installing Clover now.

MBR or GPT for the formatting? I used GPT the first time I tried and MBR the second time.
