You should probably build a clean installer USB and remove the root-dmg line in your args.
It seems to be pointing to a non existing path.
But I can confirm that Leesureone's OC 6.3 EFI for NUC8 works fine with Big Sur.
I only had to update some kext.
when installing, ignore the "non name"...

people tell me to use Opencore instead of clover, but I find it way harder to set up.
I'm having the same problem.
My Hackintosh won't boot normally, only safemode and I can't access the EFI partition.
I tried doing the workaround, but after mounting the EFI partition, the volume "EFI" is just empty.
I'm also not quite understanding how to copy the drivers to the EFI partition.
I mean, I can access the partition and all, but the guide does not clearly say which files from what folder.
My EFI Partition has both drivers64UEFI AND drivers64 folder where some .efi files with -64 at the end are...
