On Ubuntu you will need to install an OEM kernel that will enable the IGPU output : sudo apt install linux-oem-20.04b

Connected remotely I can see the UHD 630 is identified correctly but no video output on any port: DVI, HDML or DP.
I tried for one week and gave up, the best I could was to see a video output with 14Mb VRAM and no acceleration.
Let's hope they will release an iMac based on Intel...
I have a new Asus Z590M Prime-Plus paired with a i5 10400 and didn't manage to enable the UHD 630. The same CPU paired with a Z490 works perfectly fine.
No need for plug 1 ssdt, in my experience the new CPUs have build in hardware power management.
For the RX 560, try another PCIE slot.

Get MaciASL and look if you have PC00 or PCI0, mine after the patch have PCI0.
Remove SSDT-PLUG.aml (CPU PM) and do the test again.
DSDT patch in OpenCore rename PC00 into PCI0 find 50433030 replace 50434930 , because all 500 series uses PC00 instead of PCI0.
