Hello , my slave Mojave computer displays a max 1280x1024 by screen sharing on my master computer catalina on a big cinema display, any idea on how to increase the résolution of the slave computer ? (not connected to any screen but by rj45, so préférence monitor displays only the 2 résolution below)
Any help really appreciated, best.

You need to install a 'Dummy/Ghost' GPU connector on your Mojave system. This can be DisplayPort or HDMI, depending on the port(s) you have available.

For my Mac servers (HP Servers running macOS Catalina and Monterey) I use 2 x DisplayPort adapters, as found on this eBay search.

These adapters trick the system into thinking a screen is connected, so they provide improved resolutions. For example I get 2560 x 1440 on my Skylake server and 1920 x 1080 on my Sandy Bridge server when using screen sharing.
