Dualboot on one SSD or on two?

Hey guys,
Im planning to dual boot El Capitan (or Sierra, not sure if thats stable yet) and Windows 10.
I got 2x 500gb SSDs, and a 2TB HDD. Whats the smartest decision here?

The HDD has to be shared by the two systems for project files (adobe premiere, after effects), videoclips and audio-samples.

The smartest move would be to use one SSD for each OS, giving them enough space for programs and everything that I'd want to install, right?
However, if I'd use one SSD for both OS's I could use the second SSD to keep my current projects and files that are in use for faster access and achieve all older projects on the HDD.

Anyone with a similar setup?

Separate drives for Windows and OS X is your best option. If you need faster access to scratch files get another SSD.
