To change the language in OP's EFI you need to change "prev-lang:kbd" (under NVRAM > Add > 7C436110-AB2A-4BBB-A880-FE41995C9F82) to type string and set the value to "en-US:0" minus the quotes. The OpenCore guide gives the explanation why here. I followed it and was able to get to the post...
