ADDITION:
I could finally boot, by disabling InjectNvidia and the following Changes inside the BIOS:
IGPU Dual (Lucid) disabled
Shared Memory from fixed "64MB" to "Auto" to disable the onboard graphics card
The system is now booted showing my "GTX 780 3GB" correctly

i just switched from Sierra to High Sierra and i can boot to the Desktop without my Nvidia GTX 780 just fine.
I removed the old Web Drivers, rebooted, did the SIP magic, followed the guide here...
So, after quite some hours now what i did and the result.
At first i tried to downgrade the BIOS on my HP and found out, that once you flash a newer Version F.36 for example, you can only downgrade to F.35 and not F.16. (wanted to check if i can write the EFIvars there)
