And if you can boot on 17,1 - run your config through OpenCore Configurators config checker.
And of course, not to be insulting but double check you've no kext updates with Hackintool or something
I’ve been using 18,3 on Catalina. 200 Series, Kabylake user here. Switching to OpenCore significantly improved stability. About to try the Big Sur update. Will keep you posted.
Thanks for reiterating this. I’d like to re-suggest a clean install, don’t touch SLE or LE (don’t install kexts with Kextbeast, Hackintool etc) and put all your user additions in Other
They way it works is, everything that’s in SLE will boot with the system regardless. Provided you’ve set kext injection to ‘detect’ in clover, it won’t override anything that’s already loaded onto the system. It will skip.

I'd really advise you put user kexts into 'EFI/CLOVER/kexts/Other', this is currently the standard for Catalina
EDIT: In fact, that pretty much made my system functional again. It's the little things.
