Mate you can't generalize overclocking like that. Every silicon device has its own flaws & imperfections and therefore needs its own configuration. If you want stability, go for stock settings. If you absolutely want OC, boot up windows and tweak your settings there where tooling is much better...
Big Sur has fixed all (known) issues that I experienced with my 5700XT. Not a single crash or artifact yet.
