What's Up with Clover is not ready for Big Sur?

OpenCore work well and is more actively supported, more Mac like experience too

    << Solved >> Successful HP Prodesk 600 G5 i5 9500T

This should be an easy system to Hack, I would use OpenCore 5.9 if it was mine. HP BIOS can have limited settings so that would probably be the most challenging aspect.

Black Screen only on installation process on Catalina

Good work man, I did notice that you have a lot of drivers that are not need and you have kexts that you should use one or the other... I am attaching my OC folder for you to review, for the best results, use only want I is needed. for System temps I use Intel Power Gadget. its free and display...

    << Solved >> Cant boot after fresh install 10.15.5 ( [EB]#LOG:EXITBS:START] )

First, you are going to need this added to your boot args, agdpmod=pikera Your EFI is jacked, I would recommend moving to OpenCore, big learning curve but better performance

    NVME Drive from rMBP 2015

That is how I used to do it, install Mac OS from a real Mac mini, once the install was completed and it rebooted, I would shut it down and install clover and use it in my Hackintosh.
