This was solved. It was a clover issue. I simply moved my backup EFI info to the EFI mount and it all boots fine now.

So I solved this on my own. But I don't understand why it happened. I simply added the EFI info from my backup and everything boots fine now. I don't know why those drives are showing up that way but it's working. If anyone has anything to share about why this would happen please do. Thanks.
