Found the answer! Use a combination of SoundFlower and AU Lab! SF sets up an imaginary 16 channel patch and AU Lab connects the dots to the appropriate speakers. It shouldn't need much explanation, it's a simple interface. (Don't forget to set the patch up within Audio MIDI Setup)
