Adrian - thanks so much for getting us past this hump. It was the keyboard - once I swapped in a different one I was able to see the OS X install DVD option, and our installation proceeded from there.
We're not done yet - we currently can't boot into Snow Leopard without starting with iBoot...
Interesting question. Once I press F5 no Snow Leopard option shows on the screen. I searched tonymacx.com and found this image, which is what I see (except my version number shows Chimera v2.2.0 r2248). Your question is the first hint to suggest I *should* see a Snow Leopard option on my screen...
