I found my answer in another thread! If anyone else is having a similar issue: Download Clover Configurator, then check the "Fix shutdown" box in the ACPI tab. Sorry for the unnecessary thread.

Just built my first Hackintosh ever (10.12.1), and couldn't be happier. Now I just need to find out how to stop it from instantly restarting 2 seconds after shutdown if there is anything connected via USB. I know I've seen other people on here dealing with this, I just can't find the right...

Did you use Sierra 10.12 or 10.12.1? If you used 10.12 - where did you get it from? I'm currently working on this same build.

Head over to the user builds section, find a configuration you like and just copy that.

If not - could someone perhaps point me to a GPU that would work in this config (the GA-Z170X-Gaming 7 + i7 6700k Skylake) that can handle two 4k monitors? Or maybe a completely different setup that is known to work well? I would be forever grateful!
