Yes. You could still use a 6800/XT with Big Sur or get an older RX 5700 XT such as you have in your build for yourself.

Most all my friends in music production stuck with Mojave because they have lots and lots of plugins for music production that do not run on a newer system since they are 32bit...

You should make sure all the plugins will run on a newer OS before you pick up the video card. It sounds as though a more powerful GPU is needed then the IGPU. Vega 56/64, RX 580 would be the best choices if you need to run an older OS.

Yea bro, i know this issues but i am in catalina 100% usefull vst plugins, only old 32b plugs not work on native but i have tools for run 32b plugs in 64b system (for old plugs without updates). This is not a problem here but thnks

At the day the only possible issue is the firewire audio card… but let's try it with Big Sur.

If you confirm that the 6600XT graphics card works with Big Sur, we will do it.

There are many other graphics card choices that will work that you can still buy. Some, you may have to get used/refurbished. A Radeon Pro WX-4100 or 5100 will work natively. Many other Polaris based AMD cards too. If you can budget in more money, an RX 6800 works with Big Sur.

Radeon Pro are more expensive than consumer RX cards, but should have long availability. I can indeed find W5500 cards for about 500 E from many Dutch retailers, and there's a second-hand W5700 on eBay Germany at that price level.

Yes, my friend is not a "gamer", need graphic card only for mount, edit and render in "premiere" or similar soft. Im dont know about this, im only music production soft. I will check these cards in Ebay, thanks

Then check with your friend for the required performance level.
As guidance:
WX4100 = RX 560
WX5100 = RX 570
WX7100 = RX 580 (there Polaris cards are getting old and pricey for what they are, but are compatible from Sierra onwards and are all single slot, which may be handy for compact builds)
WX8200 = Vega 56
WX9100 = Vega 64 (the Vegas are the top dogs, but quite expensive; work from Mojave onwards)
W5500 = RX 5500
W5700 = RX 5700 (less powerful than RX 6600, but work with Catalina and Big Sur)
