You should probably build a clean installer USB and remove the root-dmg line in your args.
It seems to be pointing to a non existing path.

But I can confirm that Leesureone's OC 6.3 EFI for NUC8 works fine with Big Sur.
I only had to update some kext.
when installing, ignore the "non name" entry in boot picker, only go for Mac OS installer and Mac OS itself.

I'm now in Live Linux because I have not second pc and root-dmg have not in args, because I don't see him in text editor. I see him only in boot.

It won't work...I haven't updated that folder to account for the needed changes. I suggest if you want to use Big Sur to change to the
Opencore Bootloader
I've tried a few of your OC EFI folders with no luck, I have windows and linux multi booting with clover now, I kind of assumed that was the problem. Choosing OC from the boot menu goes to a black screen and reboots.
Definitely tried 5.9 and 6.2. Suggestions?
and thank you for your contributions to the NUC8.

Sorry, not enough detailed information to be able to help, this is the Dortania trouble shooting guide, maybe you can get your answer there. https://dortania.github.io/OpenCore...ooting/troubleshooting.html#table-of-contents
