Lion 10.7.3 from the app store
Comments:
The HDDs were all raided from my old G5 and various external usb drives and are the weakest link in my system. I'm tempted to get an SSD (or two) soon. I also already owned the wireless kb & mouse.
The motherboard was the cheapest Gigabyte Z68 I could find with a decent write-up so I figured it would be a good choice as many others would also be buying with a budget in mind and support should still be available for some time.
The processor seemed like the best choice (onboard gfx for now with potential for OC & gaming at some point). My original build was supposed to be a budget one but the artefacts on safari with HD 3000 annoyed me (providing the perfect excuse to upgrade the graphics). My PSU was then upgraded from my cx430 to accommodate my Sapphire 6870 (and there goes my budget hack).
The 6870 wouldn't wake from sleep via HDMI. I eventually found a patched ATI6000Controller.kext by fffeee on insanelymac for the sapphire hd 6870 which allowed me to sleep via HDMI (use with Duckweed frame buffer).

I needed HDMI audio so I patched my DSDT with Toledas HDMI guide (Lion HDMI Audio - Part 2a: DSDT Edits/Discrete - AMD/Nvidia) viewtopic.php?f=162&t=31947&start=0
Once sleep and audio worked via HDMI I could get rid of the extra dvi cable and stop plugging in my hifi just to hear the football or youtube on lion.
I still had my ancient DBT-120 USB bluetooth adapter which required BluetoothFWUpdate1.2.dmg. My wireless mighty mouse and keyboard work, just my keyboard is a little slow to register after sleep, sometimes too slow to register for the chimera screen.
I wanted to use my G5 case but I got the Antec 300 as a stop-gap, it was recommended on a bunch of forums and not too expensive. I'll get round to it one day...
MultiBeast Configuration for Lion
Note - I removed ALC8xxHDA.kext and AppleHDA.kext (version1.7.9) to patch my DSDT for HDMI audio. I used Toledas 889 Beta AppleHDA.kext (version2.1.3)
Overall I'm very happy with my build. It is over clocked to 4GHz and the ability to switch over to windows for gaming and watching football is so convenient. I get about 11000 on geekbench and 51 fps on cinebench. My CPU cores run at about 28c according to SMC Monitor and the sapphire is usually at 27c on idle 42c whilst running cinebench.
For anyone considering building a hackintosh (who has never built a PC) I had never entered the bios of a PC or even installed anything other than a stick of RAM in my old G5. I recommend watching some installation videos on youtube first to get a rough idea of the whole process before you go in to detailed installation guides.
I installed lion a bunch of times and soon learned to take a break or try again the next day when i got stuck. I could stay up for hours and get nowhere with a problem which takes 5 minutes to resolve the following day.
Make a note of everything you do (even if it doesn't work) or you can go round in circles or forget what you've installed. Also saving a backup partition to incrementally use as you get the next part of your hack working or to use before you change something which could ruin your installation - carbon copy cloner is a must for me and its free.
Once I had a successful hackintosh I reinstalled using my notes - only installing the things that worked. This way I removed the doubt about terminal commands that appeared not to work and kexts which may have got lost in my extensions etc.
