Yes your system will be fine with a 600 watt PSU. You can probably run just fine with a 450 to 500 Watt PSU as all of my current Sky Lake and Kaby Lake systems run with 450 or 500 Watt PSUs.

Just watch out for failed capacitors, as some of those suffered from that bout of trouble.
