Hi Guys,
I thought I would share my success story.
Check out the parts within RIG #2 of my Signature.
My biggest mistake when purchasing was not acquiring the i3-2105 with HD3000 onboard Graphics. Instead I purchased a i3-2100 as the i3-2105 was not available for purchase within Australia, so I ended up with HD2000 onboard Graphics. Brick Wall!! My Head!!
Next purchase, to help fix my stuff up, was to source a Sapphire ATI 5570 1GB Video Card for an attempt at discrete graphics.
With the help of forum member 'toleda' and his useful threads I succeeded by doing the following.

I performed a clean install of 10.7.2 from a USB prepared by UniBeast.
Placed the following files on my desktop..
These from customac_mini_tuneup_kit_v4

AppleHDA.kext
AppleRTC.kext
These from customac_mini_sapphire_hd_5570_hdmi_audio
http://www.tonymacx86.com/download/file.php?id=16574
ATI5000Controller.kext
dsdt.aml
Ran KextBeast (which installed the above kexts)
http://www.tonymacx86.com/10011001010110100001/KextBeast.zip
Ran MultiBeast 4.2.0 with UserDSDT selected (which installs the above dsdt.aml)
Also Selected the following
System Utilities - Repair Permissions
Drivers & Bootloaders - Network - Lnx2Mac's RealtekRTL81xx
Customization - Boot Options - 64-bit Apple Boot Screen & Use KernelCache
System Definitions - Mac mini
Added the following to org.chameleon.Boot.plist
<key>AtiConfig</key>
<string>Eulemur</string>
Ran MultiBeast again and selected
System Utilities - Repair Permissions
End Result after Restart - See Attached Image
All I am missing now is USB3 - Not phased as I do not have any USB3 devices at this point. I could install this with MultiBeast at a later stage if required.
