other than that, i am not sure what else he can try

Ok, I removed the SSD and the HDD and booted using the USB drive.

It brings me to the OS X installation screen. How do I edit the config.plist from here?

boot form usb but choose "boot from macos" (or whatever you named your mac hard drive)

Where do I choose that?

Do you have the disk connected that you installed OS X on?

If so, from the BIOS screen select your start up disk as your USB drive and then at the clover screen you should get your macOS drive, or what ever you named it, as an option.

No, I had to disconnect my internal drives in order to get this far. Should I reconnect them now?

that should appear in the clover boot menu when you boot from the usb disk

They don't, because they're disconnected, because I couldn't get it to work while they were still connected. Should I reconnect them?

Ok. There are only three drives: SSD (with Mac OS), HDD (just storage) and USB. I will reconnect SSD and leave USB connected, and try again.

And press F12, or what ever you need to push to select your start up disk, at the BIOS screen to select the USB as the boot drive.
