You can use iMac18,1 for macOS Monterey and Ventura, but not for Sonoma as the Kaby Lake SMBIOS was dropped with the release of Sonoma.

You would be best served using the MacPro7,1 SMBIOS in Sonoma as you have a Haswell system, as the IGPU is not supported and should be disabled in the bios when running Ventura or Sonoma.
