Personally, I'd go for something like a 9600GT or GT240. You can pick them up second hand for next to nothing. Plus they work OOB. However, if you wanted a new card I'd get an HD6450. Apparently they are now supported.

Why not get a cheap Socket 1155 ITX board with a celeron sandy bridge chip? You won't get onboard video but you will have that problem with the atom anyway. You would get much better performance and you could even run OSX 10.7 on it.
Well you can't download Lion on 10.5. There is no app store. You would need to buy the Lion USB stick from an apple store. Even then I don't know if unibeast would work on Leopard. I am pretty sure you need Snow Leopard.

In that case you should be fine with the basic core i3 CustoMac build. The built in HD3000 graphics should be ample for HD playback.
