I started with my Samsung Slate a while back, but I'm sure you can get OSX on your Iconia some how.

Depends on how hard you try.
1)Find out what your Intel HD graphics chipset is. Either HD3000 or HD4000.
If you have usb3.0 then you most likely have HD4000 witch means you should install OSX 10.8.3
If you don't have usb3.0 then you most likely have HD3000 witch means you should install OSX 10.7.5
2)Update the BIOS to UEFI. I'v attached the latest BIOS Update to this post at the bottom.
Acer has an update file on their drivers page if you want you can download it from there.
http://us.acer.com/ac/en/US/content/drivers
Setting up the UEFI BIOS is what you will also have to test out yourself.
Make sure the SATA controller is set to AHCI mode.
Also look for the EHCI handoff to be enabled and power management to be set to S3.
3)Make a uni-beast 10.8.3 or 10.7.5 installer and try it out.
10.8.3 Uni-Beast Guid

10.7.5 Uni-Beast Guid

I'm curious to see if you can get the installer to show up on the Iconia screen in 1080p full video acceleration.
It won't be hard to get touch to work. Most likely it will auto recognized. Most important is that native screen.
Your Acer does not have a Wacom digitizer and pen so you should have an easier time getting OSX on your machine.
Give it a try and see if the installer can boot to the screen. If you get it that far me and the rest off the gang here will help you to get the rest going.
The thing to know is if you want a 100% working machine right off the bat, you can just forget about it.
This will take a long time to get it to work in OSX the way it does in WIN.
But when you do...You will be the only kid on the block or the world who has a OSX touch-screen tablet.
Things that will probably cause issues are the Screen, Audio, Wifi, BlueTooth, but I have a feeling if you update BIOS to UEFI you will have native screen at full acceleration and the world is in your hands from there on.
Give it a try and let me know what happens.
