Interesting, I've had a couple Intel 600 and 700 series boards and never needed any MimoWhitelist patches.

The 7000 series AMD dGPUs are not compatible, do not buy one if you expect to run macOS. The ASRock Graphics Engine Radeon RX 6800 XT should be a fine choice.

If you switch back to Clover does it still do it? You have some older components, could be somethings acting up. Are you monitoring temperatures of the various components? Could could be time for a spring cleaning, reapplication of thermal paste on your CPU or time to buy newer parts.

Unfortunately that is a resounding no, I had the same motherboard paired with a RX6900 XT card though and it was a rock.

Your EFI looks like it was taken from another user with a different ethernet controller being you are, among some other issues, using LucyRTL8125Ethernet.kext that will not work. See here for help with the Intel i225v controller...
