So here is my attempt to get Catalina working on a Z10PE-D16 WS using OpenCore.
Tried using MacPro7,1 failed, keeps restarting during boot
Tried using MacPro6,1 failed, keeps restarting during boot
Tried using iMacPro1,1 failed, keeps restarting during boot

ended up using iMac14,2
It boots and seems to work ok.
volume control doesn't work and I get the beachball of doom while in bluetooth in system preferences not sure if it's because it has no serial number or because I have 2 bluetooth adaptors (1 from a real mac and 1 for PC)
Can't get any temps from the cpu or fan speeds.

No idea if it's set up correctly (I have no idea what I'm doing).
Feel free to tell me what I've done wrong and make improvements

Go back and read Configuration.pdf very carefully, like 5 times. You really need to know your hardware to use OC. I don't have your hardware so not sure why it panics on the mac pro smbios's. To see temps and fans you need to add SMCProcessor.kext and SMCSuperIO.kext to your config. You need to be very specific with your platform info, don't leave any blanks in generic if using automatic.

I could boot Mohave great but not Catalina, redownload VirtualSMC and Catalina now works too. OC is very sensitive about it's config and the files it uses. Make sure your kexts are for OC, not all the Clover kexts or drivers (.efi's) will work with OC.
 
I've added SMCProcessor.kext and SMCSuperIO.kext now I have 53 working temps. No speeds from any of the 14 fans.
Might work on the USB issue next, bluetooth is still playing with the beachball of doom.
 
Catalina just working fine with board Z10PE-D16 WS using iMac14,2

updated the kexts to the latest versions to work with 10.15.1
Product name updated to iMac15,1
still no idea why it reboots as a macpro

I can't get it to work as macpro1,1. continually reboots during startup.

please change serial of your mac, thank you


EFI operational 100% with Mojave

Test it with catalina, then?
