Samsung 850 Evo 500GB
Corsair Vengeance LPX DDR4 3000 MHz 16GB (2x8GB)
Corsair CS550m
Bitfenix Prodigy M

Usage:
-Audio Editing/Recording
-Light gaming (dota2 etc.)

Issues:
-I have a Palit GTX650TI 2GB will this work with this rig?
-Any keyboard and monitor recommendations?
-El Capitan or Sierra?

You shouldn't have any problems installing macOS on it. But be aware that the motherboard you chose has two old style PCI slots.

Your GTX 650 Ti should work fine.

Either El Capitan or Sierra should be fine. It's up to you which you prefer.

Ok, what peripherals would this affect mainly? GPUs?

No peripherals will be affected. It's just that there's little to no use for PCI slots nowadays. I don't even know if anyone makes any PCI cards anymore. PCI has been supplanted by PCI-e for quite some time already.
