So my 1080 will not work with Mojave, Catalina or Big Sur. So is it just high sierra ?

Sierra from 10.12.4 and High Sierra.

Your processor's integrated graphics are supported up to the current OS version however.

I think my Card would be better than to i7 gpu for photoshop & final cut

You have to use an operating system that supports your chosen hardware or use hardware that supports your chosen operating system.

Your GTX 1080 is undoubtedly much better than the CPU integrated graphics of the i7, but since it is not supported on MacOS Mojave and later, you will be unable to use its capabilities if you plan to run Mojave or a later MacOS, even if you are able to install them in its presence.

So, make up your mind. If you need to use Photoshop and Final Cut in MacOS, you will most likely need to run a recent version of MacOS (meaning Mojave and later), and that means you can't use your GTX 1080.
