Will any of these machines be able to run the latest version of Sierra? I know they'll need a GPU like a 710 or something but will they work? I am planning on getting rid of my current desktops and having one main desktop to deal with everything.

Yes, any of them should work, as long as you add a compatible graphics adapter. The audio isn't specified, but you often have to replace it with an inexpensive USB audio adapter in these pre-built systems.
