I see in the recommended build options the MacPro and am I right in that the top CPU is an i7 quad core?
I was hoping to go mad a build a real grunt of a machine specifically aiming at the most cores and CPU grunt I could.

Yes, the current top CPU in the Buyer's Guide is the quad core Core i7 7700K.

Tonymac has mentioned that the new 6 core Core i7 8700K appears to be natively supported in MacOS High Sierra.

There are Intel CPUs with more than 6 cores on the X299 platform. But they are not natively supported at this moment. That may change upon the release of the iMac Pro this month and the new 2018 Mac Pro next year.
