What is the correct recipe for hardware sensors in 2020?

I'd like to get my temperature and fan sensors reporting data to HWMonitor / Temp Monitor etc again. I used to have this working ok on my previous build but tbh I've forgotten the magic sauce and in any case I'm now running an OpenCore based system which may be different. Does anyone know the steps necessary to enable sensor-data to be seen inside macOS please?

All the information I can find is from ~2017 and I'm sure much of it is now redundant / incorporated inside VirtualSMC/FameSMC anyway.

I get the temps and fan sensors to show using these three kexts: VirtualSMC, SMCProcessor and SMCSuperIO. It shows my two case fans, the GPU fan and CPU fan. As well as other stuff too like disk temps, ram usage and so on. I run Catalina 10.15.6 in OC 0.5.9.
