ACPI Debug was informative, but didn't help me find the problem. I ended up reverting to old versions of Acidanthera's VoodooPS2Controller.kext, found that the "problem" was introduced in version 2.0.3 and I isolated the cause to a few lines of code that enabled Synaptics trackpad deep sleep in S3. The fix for this (an option to disable deep sleep) will be released in version 2.2.3 (see commit, here). For now, I used XCode 12.4 to build my own custom version of VooodooPS2Controller 2.2.2 (with my code change) and am running with this modified kext now. Now, everything that I have tested works. I do plan to create a guide for this HP Envy x360 15m (Kaby Lake R) since I'm booting with OC and using only hot patches (no manual DSDT mods) which may be educational / interesting to some.
