Venturing into Hackintosh as a frustrated video editor.

As Ewoodster said, a Gtx 580 might be good, but with your budget, I bet you could fit a 670 or 680 in there.

I am looking for something that doesn't slow down my work flow. I need to be able to be exporting in After Effects whilst doing a full render in Premier and also have plenty of freedom to keep on editing in FCP. So big beast is my goal here.

Perhaps you need the i7 4930K setup, but it isn't fully supported yet. The 2011 socket has its issues:

Avoid socket 2011 - it requires specialist knowledge to get working. There is not supported power management/speed stepping, X79 is discontinued.... and run the very likely risk that you cannot get it working.... There is little backup support in the community for this hardware.

So I am thinking to go for the more easy way, but I wonder if the 4 cores are strong enough though for my heavy video editing... (Premiere / After effects)
