So decided to try and have another bash at running my intel nuc with big sur.
Its the model D54250WYK has:
So I have managed to get Catalina installed form the pen drive on to the hard drive and copied over the efi folder to the efi folder on the hard drive. It booted.
Then i decided to upgrade to big sur using the internal upgrading tool by apple and am getting errors even tried the recovery and it will not install or boot with off the hard drive.
I have attached my efi folder that I used to get Catalina up and running after using gibos to put the os on and the efi was from members who have the same model as me. I also run the open core config list via the compare tool however i am not sure what's correct as it came up with some errors and i got some errors on the boot screen of the nuc when it starts.
I have attached what i have so far. Any help would be greatly appreciated
