Wow have prices come down on these M.2 NVMe drives.
About a year or 2 ago I bought a Samsung 970 EVO 500GB - NVMe PCIe M.2 2280 SSD (MZ-V7E500BW), which after a while I quickly filled up, looking around lately to upgrade to at least 1TB I found the prices have dropped quite a bit and I just purchased the Samsung (MZ-V7S1T0B/AM) 970 EVO Plus SSD 1TB - M.2 NVMe Interface Internal Solid State Drive with V-NAND Technology which is now $149 US.

I used clonezilla to do a byte by byte clone of the drive but unfortunately it doesn't resize your APFS system which after playing around with it for a few hours I was able to get the apfs to see and use the new space.
Here is a screen shot with the 500GB older version of the drive speeds.
Here are the newer drive results.
All seems to be running fine now on Catalina and I love the new right speeds!!
