When I backup, or at least attempt to backup via iTunes, It only takes like 2 seconds. It should be taking much longer seeing as it has to backup about 8gb. A quick look in finder confirms there was no backup, even though it said it was completed successfully.

If anyone has any suggestions as far as iTunes alternatives (needs to have a backup function, so I can completely get rid of iTunes), please let me know.
EDIT: iPod is recognized in System Information but no where else. All other USB 2/3, ports and devices are working fine.
