Installed latest beta on Gigabyte Z390M Gaming with i5 9600K and using OpenCore 0.6.0. For now everything is working ok.
I noticed that TimeMachine does not backup system "partition" anymore, so you can't restore working OS from TimeMachine backup.

Open disk utility and right click on the listed partitions and open in finder.

Big Sur has several partitions now.

Use terminal and type in: diskutil list.
Big Sur kind of has its own time machine backup it now uses Snapshots.

I don't know but I am using Time Machine with Public Beta 2. But Time Machine now using APFS even you format HFS+. When you try to select Time Machine Disk it formats auto to APFS.
