This morning, being a bit bored, I installed Monterey on a Gigabyte Z690i Aorus Ultra DDR4 board with an i5-12400 CPU (6 cores) and 32GB RAM, which already has Windows 10 installed. I kept the config file (OC 0.7.7) as simple as possible, and I emulated to iMac20,1, which has the closest similar hardware specs to my build. As a result, I probably ended up with one of the shortest and cleanest config files. All went well like a charm. No issues at all (except that the integrated Intel Bluetooth/WIFI hardware is not supported). The built-in Intel 1225-V 2.5Gb NIC was supported by Monterey OS natively and there is no need to mess with any patches or a kext file. Below is the list of hardware components I used (simple and low cost) and I am also attaching my EFI file for anyone who is interested in using it on the same or similar Z690 board.

Congratulations and well done on the successful install on a relatively new platform, quite admirable. If you want a cleaner config.plist, I have attached a series of pics with areas of you config.plist that can be deleted with no adverse effect as they are not being utilised by the system and therefore are not needed.

If you want to undertake the recommendations, I suggest you copy your EFI Folder to the EFI partition of a USB, make the deletions and then boot off the USB Drive just to be on the safe side but I am confident the deletions will not have an adverse affect on the previous state of the machine, as a matter of fact, boot time will be a shade better.

Thank you. Good suggestion.
