I'm trying to setup a new Hackintosh with the same motherboard and CPU used here. However, I'm using an SSD instead of an M.2 drive and for now I don't have a GPU. I'm also using the latest High Sierra release. The problem I'm having is that I cannot get my USB to boot.
I created the USB using Unibeast with a GPT partition as recommended by tonymacx86. (I initially tried to create it without the partition, but I got an error because it couldn't copy APFS files.) The USB was created successfully, and I changed my motherboard settings to match those at the start of this thread (however, I do not seem to have the option to enable XHCI hand-off for some reason).
When I attempt to boot from the USB from within BIOS settings, it takes me back to the BIOS settings in an instant. It's like it doesn't even try to boot it. The screen goes black for less than a second, then I'm back in the BIOS. When I attempt to boot the USB after pressing F8 at startup, I get an "operating system couldn't be found error" as if it's trying to boot Windows.
Can anyone help? I'm not sure what I'm doing wrong here.

I believe you have a higher version of bios than we do. Unfortunately I can't help you with that, you should find something similar under the same menu in bios. They changed the name of XHCI hand-off into something else. Try to find something that has the same meaning and turn that option to disabled. That should be the reason why you can't boot into usb drive.
Also, if you're attempting to install macOS High Sierra then either M.2 or SATA SSD wouldn't be a problem for you, they are both natively supported. Read the instructions on the first page, I mentioned that you need to disable Intel support in order to boot macOS through SATA drives.
Last thing is, you need to know if you want either APFS or HFS+ format. Tonymacx86 did a guide on how to use HFS+ on High Sierra.

EDIT: Never mind. I switched the USB stick to a USB 2.0 port (from USB 3.0) and that worked.
Thanks for replying to me. After trying many different things, I have given up and decided to just use Sierra instead. I have exactly the same motherboard and CPU as you, so I followed your guide again.
I can now boot into Clover and I see the macOS install USB. When I boot that, I see the Apple logo, and then the loading bar. All seems to be working fine. As it gets toward the end of the loading bar, however, the screen goes black and then I see another logo (like in the image attached) and I have to restart.
Do you know what's going wrong here? I double-checked all my steps and I don't think I've missed anything.

For Mojave, it seems like a better approach would be using Whatevergreen and Lilu instead of fakepciid_intel_hd_graphics.It doesn't work ... I can't get back to Intel.
