I just did! But let me see if I can distill it.
After installing Parallels, I was hoping for an "Install from Bootcamp" option, but did not see it. The best I got was an "Install from Windows 7 DVD" and selected it. It was THERE I found the "install from Bootcamp Partition" option.
From there, where I was going wrong was that I had to set the configuration for that virtual machine in Parallels. Under Hardware, I had to set "Hard Disk 1" to the actual SATA address for that drive. After that, clicking that virtual machine began the setup process, and bingo.
