I'm posting this as a lot of the builds on here are very high end and thought this might be useful for anyone looking for a mid range kind of option.

Working great and not too painful to set up, very pleased as last time I tried this years ago it was a bit of an ordeal! I'm using this for app development + general coding.

Parts list, all currently in stock in the uk (mostly from amazon, rest from scan or eBay):

G.SKILL Ripjaws 4 Series DDR4 16 GB (2 x 8 GB) DIMM 288-Pin Memory
Corsair CP-9020098-UK VS Series VS650 ATX/EPS 80 PLUS Power Supply Unit, UK - 650 W
cooler Cooler Master Hyper 212 EVO CPU Cooler

Seagate Desktop 3.5 inch 2TB 7200 RPM 64MB 6GB/S Internal SATA Drive
keyboard A1048 Mac Wired keyboard
Silverstone Kublai Mid Tower Case

Install notes:

Needed to select "USB ownership" in order to boot (make this permanent using Clover Configurator after install).
Nvidia web drivers worked like a charm, no HDMI but I have 2 working DVI ports for my 2 monitors.
Realtek > 100 series audio fixes sound
Intel > IntelMausiEthernet v.2.2.0 fixes ethernet

Updated to latest Sierra 10.12.3 via App store which worked fine, Nvidia drivers auto updated after install.

Core temperatures are typically <30°C which I'm very pleased with, system runs very quiet.
