I've only started working on this in the last couple of days but have had great success so far.

Installation Notes
  • Had issues with booting from USB Key so made a 16GB Partition on SSD and installed UniBeast there - then installed macOS to 2nd partition.
  • Once I could boot to Clover I had halt on boots, but using -v argument deciphered it was the USB causing it. Thanks to Ideabit (#5) manually setting USB ownership on boot first time and then changed it permanently via Clover Configurator fixed it.
  • The next issue was with the nVidia GPU in Sierra, so used nv_disable=1 to install and get up and going, then installed Web Drivers - which then made my screen black as I had used the MacPro6,1 profile. Switching to the MacPro5,1 fixed boots.
  • To get sound working I used Storks info for the Gaming 7 Mobo (http://www.insanelymac.com/forum/topic/309729-gigabyte-z170x-gaming-7-success-hackintosh/). Have sound working fine.
  • 05.2020 Update - NVMe support can be added via patches to config.plist (easily done with configurator as theres 10 to do).

UEFI Settings
1. Set to Optimized Defaults.
2. Disable Onboard Graphics
3. Disable IOAPIC 24-119 Entries

MultiBeast Settings
Install UEFI Clover
Disk -> 3rd Party SATA (for ASMedia ASM1061)
Misc -> FakeSMC + Plugins + HWMonitor
Networking -> Atheros E2200Ethernet v2.2.0
MacPro 5,1 System Definition

Updates

Update1
Switched to iMac17,1 as its closer specs to this computer but to fix black screen issue of this system Definition had to do the following steps -
1. Disable SIP (System Integrity Protection) via clover by changing this line in clovers config.plist

<string>0x67</string> changed from <string>0x3</string>
<key>BooterConfig</key>
<string>0x28</string>
</dict>
2. Run AGDPfix 1.3 (link) which patches the Apple graphics kexts for MacPro6,1 to no disable display output. There are DSDT edits to also fix this long term but this patch is easily enough to re-run on updates via Screen Sharing.

Just a follow up that I installed a GTX-1080 with the new nVidia web drivers and had no issues getting it work.
 
Hi, I'm planing to use quite similar components than you do.
Is the system working fine with that mobo? (Allready purchased it)
Have you find a way to get tb3 and the m.2 slot working?

Going to give it a go from scratch - switched GPU's to RX 5700 XT over the GTX 1080.
And yes to M.2 slot does indeed work.
 
I'll hopefully post more on this in the future but doing a complete rebuild of this based 10.15.5.
DEFINTITELY need to set Fixownership ON for the USB or you won't boot in Unibeast or Multibeast.
Catalina works natively with an NVMe 970 Pro 500GB Drive as my boot - no special work arounds anymore.

Also DEFINITELY need Lilu and Whatevergreen Kext's installed along with the agdpmod=pikera boot argument for the RX 5700XT to start - thankfully the mobo has an Intel GPU too so started process with just that and added the 5700 XT once we were booting properly.

Thunderbolt 3 - as long as plugging in on boot. Also no crash on pulling device while on. Tested Video I/O Device, SSD.

Sleep - goes to sleep but wakes right back up again. Kicks some USB devices off when it does this so more research to come.
