It’s okay to include everything. If you’re migrating to an Apple Silicon MacBook Pro, use Migration Assistant during the macOS setup wizard (the welcome screen wizard) to transfer applications and data. Migration Assistant will not transfer /System/Library/Extensions but it will transfer /Library/Extensions. These can be removed later.@CaseySJ I want to TIMEMACHINE my Hackintosh (OpenCore) and move it to a MacBook Pro. Should I exclude the system/library/extensions and macOS/library/extensions folders from the TM?

However, depending on how old the Hackintosh version of macOS is (whether it was freshly installed within the last couple of years or whether it was upgraded in-place year after year after year) it may be better not to migrate. Instead, one de-license everything on the old system and reinstall the apps from scratch on the new system.
Then we can manually copy all our documents to the new system. This can be done by installing the old NVMe SSD into a cheap USB 3.0 enclosure and connecting it directly to the new MacBook Pro, then dragging-and-dropping all files across. Keep the old MVMe intact for a couple of months at least to ensure that everything of value has been transferred.
