This was an extremely straight forward process with these components thanks to tonymacx86’s UniBeast: Install Mac OS X Lion Using an All-In-One Bootable USB Drive. I will walk you through step by step with what I did.

First, I downloaded Lion on my MacBook Pro and prepared the UniBeast USB stick by following step 2 of tonymacx86’s UniBeast Guide. (TIP: If you are already running lion and want to get access to the Install Lion app for UniBeast, go to the app store and click Purchases while holding down the option key, you can then download Lion again and get the Intall Lion app.) I also downloaded MultiBeast 4.1 and the DSDT for my motherboard’s version which was F3 and copied these onto my USB stick.

I then built my machine and plugged everything in, yes that included both sticks of ram and the graphics card. I know there are some guides out there that tell you to only plug one stick of ram in and not to plug your graphics card in at first but I tried it with everything plugged in and it worked for me.

Next I switched the machine on and made the necessary changes to the BIOS. These were:
  • - With the UniBeast USB plugged in, I set the boot priority so that this USB was first followed by my hard drive
    - Changed the SATA control mode to AHCI
    - Enabled HPET support and changed HPET mode to 64 bit
I then saved these changes and rebooted.

My machine then booted into UniBeast, I then followed tonymacx86’s UniBeast instructions for Step 3 exactly and arrived at the Lion desktop with no problems.

I then copied MultiBeast and my DSDT file to my desktop. I renamed the DSDT file to DSDT.aml. I ran MultiBeast and selected the exact same options as in Step 4 of tonymacx86’s guide. With the USB stick now unplugged, I rebooted my system and lion booted from my hard drive successfully.

Everything worked apart from sleep which caused a CMOS reset. To fix this I copied this code into terminal:

I have also successfully managed to get dual booting to work with windows 7, I will update this build description with instructions if anybody wants them.

is the framebuffer loading correctly and fully?

It would help if you could post the result of this command in terminal:
ioreg | grep ATY

do you get all the outputs, and does the card show up correctly in system profiler?

I haven't been able to get both the dvi-i(analog) and the dvi-d ports working on my 6870 in 10.6.8 unless i use the generic framebuffer stub, which causes crashes in some programs. I'd upgrade to lion if it works.

Sounds like a smooth install! This is what I like to hear. I am looking to build my first system over xmas break, and have similar components in mind.
As for the XFX 6870...
Did you buy the single fan or double fan model? The links from Amazon/Newegg you posted are two different models of the 6870.
I assume it worked OOB natively? Thanks!
 
Mine is the single fan and yes it has worked oob :) but I've yet to test the hdmi and dvi ports

it looks like you're missing some outputs, not sure which ones. Good chance it's the DVI-D port and/or the analog component of the DVI-I, which is what happens when i use aty_init to inject the framebuffer in 10.6.8.

May I ask which revision of GA-Z68AP-D3 are you using? Rev 1.3 or Rev 1.0?
