Stuck at End Randomseed - don't know where to go from here

Motherboard
MSI B560i Gaming Edge
CPU
i5-11600K Rocket Lake
Graphics
Nvidia RTX3070
Here's my situation:
1) PC w/MSI B560i Gaming Edge mobo, Intel Core i5-11600K Rocket Lake, 125gb unallocated partition on 500gb SSD
2) Built bootable USB (16gb) using Unibeast 9.3.0 Mojave, and Multibeast 11.3.0 Mojave using this guide: https://www.tonymacx86.com/threads/...ported-intel-based-pc.259381/#create_unibeast
3) My goal is to have Mojave installed/bootable from SSD so that I can downgrade an iPad Mini 2 from iOS 12.5.7 > 10.3.3.
(I know this is a lot of trouble for this purpose but downgrading doesn't work from VMs, or my Ubuntu install, I don't own a Mac, so I'm left with the option of trying a Hackintosh...)
3) Tried booting from USB 3 port and USB 2 port - same results: Stuck at "End Randomseed" etc.

Can anyone offer some specific help?

Sorry - my mistake, I did not update my PC specs.
Should be:
MSI B560i Gaming Edge mobo, Intel Core i5-11600K Rocket Lake, Nvidia RTX3070

Also, I'm not necessarily required to use Mojave, so if there's a more compatible mac OS, please let me know.

There are no Mac drivers at all for RTX 3070 graphics.

So I can't build anything?
Can't I use the Intel built-in graphics?
I just need a running "mac" to try my downgrade.
(Also, if this matters, I've got a Mojave VM running fine - it won't work for my downgrading purposes.)

I have never seen anyone install Mojave on an 11th gen system. Unsupported graphics makes it impossible. Buy some older hardware if you want Mojave. Intel 6th gen or older will work fine. You could also buy a 2012 Mac mini for 100 dollars or less and install Mojave easily.

Back to Ubuntu then....thanks for clarifying so I don't waste any more time :)

What if I don't require Mojave but can use something newer - what would you suggest?

You could try AnyFix or similar in Windows.
