No AMD CPU is fully supported by OS X. Kernel patches are required, and even then many professional applications (photo, audio, video) do not work properly because they expect AVX support.

To make the matter worse, your RX 6700XT is not supported by OS X. You'd need another dGPU to use your current system as a hackintosh anyway.

If you want to try hackintoshing with minimal hassle, your best option is to get an Intel system with 400-series chipset (or older) and a matching 10th generation (or older) CPU with an integrated iGPU.

Apple WWDC was in June and has already passed.

Your hope is for Apple to announce some new Macs (Apple Silicon Macs) which uses some variations of these cards, or Apple adds support for them in Monterey if it wants to enable eGPU support for these cards in both Intel and Apple Silicon Macs. But you have to be ready for the fact that no support for them may be forthcoming.

Otherwise I agree with the other poster that it is better for you to go for a 400 series motherboard with a 10th generation Intel i3/i5/i7/i9 CPU, which is the last generation of Intel hardware officially supported by MacOS.
