Seems like you already have it (the phone shown in ioreg).

I finally managed to get a USB C 3.1 cable, (phone didn't ship with one for whatever reason), and have done some tests.

So without any USB related SSDTs:
-Type C 2.0 uses HS03 in one orientation, HS04 in the other
-Type C 3.1 uses SS03 in one orientation (and phone can see the laptop), and isn't detected at all in the other (The phone can't see the laptop, but does claim to be charging)

Any help would be much appreciated.

(Attached is the script generated debug report, a manually generated IOreg which (should?) show the device in the different states, as well as a screenshot to show this)

You're experiencing the result of the port limit.
